Clover Club

  • 50ml Bombay Sapphire
  • 20ml Grenadine
  • 20ml Lemon Juice
  • 1 Egg White

Shake this without ice first and then when the whites have emulsified, add ice and shake HARD! Strain to a chilled Coupettetete or cocktail glass. For a “clover leaf” add a pressed mint leaf to the top of the thick foam on the glass.

Named after the gents club it was created in, the Clover club still appeals to everyone since its 1911 appearance in Philadelphia. Adjust the Grenadine to taste for those with a sweeter palate. Martini vermouth and Chambord black raspberry liquor also work well!
