- 15ml Cassis (or Chambord)
- Top with Champagne
Build this drink slowly and stir lightly as not to disturb the bubbles too much.
A variation of the Kir cocktail, which used white wine instead of champagne. It was named after Felix Kir, mayor of Dijon, who post WW2 would drink “lesser” quality white Burgundy wines with a splash of the regions other great export, cassis when entertaining visiting statesman, as zi Germanz nicked all of the red! Mayor Kir has taught us a great lesson here, you cant let any booze go to waist!
