Southside Royal

  • 25ml Bombay Sapphire
  • 20ml Lemon Juice
  • 8 Mint Leaves
  • 1 Tea Spoon Caster Sugar
  • 50ml Champagne

Shake all the ingredients together except for the champagne and strain in to a martini glass. Top with the champagne and garnish with a floating mint leaf.

The South Side has a few stories and a few variations. The “royal” substitutes champagne for the original splash of orange juice. A drink that was drunk by the Southside gang of 1920′s prohibition, run by mobster Joe Saltis who added the ingredients to kill the taste of the bootlegged gin he was supplying to Southside Chicago. They were the biggest bootlegging firm in the county next to the “Chicago Outfit” run by crime lord Al Capone… Cool!
