Clover Leaf

  • 50ml Bombay Sapphire
  • 20ml Grenadine
  • 20ml Lemon Juice
  • 1 Egg White

Shake this without ice first and then when the whites have emulsified add ice and shake HARD! Strain to a chilled Coupette or cocktail glass. Add a pressed mint leaf to the top of the thick foam.

The Clover leaf, a slight variation to the Clover club simply adds the garnish of a mint leaf. I guess it must have some thing to do with the Irish contingent that fell in love with the 1911 Philadelphia classic.
